Whole Australian strawberries, freeze-dried until they shatter, then coated in our 29% cocoa white chocolate. White is the sweetest and creamiest of the four coatings we put on this berry — it rounds off the fruit’s tartness rather than cutting through it, so it’s the one to pick if dark chocolate reads as too sharp for you. Freeze-drying takes the moisture out without cooking the fruit, so the strawberry stays crisp right through and snaps rather than chews.
